Title: What is better choice of Panel here on these 2? More Watts or Amps?

I am installing 6 of these on my RV and wanted to know what would be the better choice?

425 Watt

Doesn't matter, it's going into a MPPT controller, right ?

But what FITS on there is most important.

what is the charge controller and battery voltage you ar looking at using
the 400 W ones you could setup as 3 strings of 2 for 100V (open circut) but the 425W ones would be 6 strings of 1 else the voltage would be too high for most controllers.
take a look at the string sizing tool and play around with the configs to get max power out

Generally,   for RVs,  etc,   running all PVs as singles,   in parallel, can help reduce the effects of shading.

Knowing little of the exact application,  would vote for the Sunpower 425s for this reason,  if they are available.
