If you can disconnect the Sharps  from the controller then I would just connect them in series and wire direct to a 2Kw 120V
heating element.  If you want to control the water temp then a cheap surface mounting temperature switch can be wired to an SSR (such as a Crydom D2D20) to disconnect panels when set temp is reached. You will need to power the ssr from your battery.
